Moroccan Anise Seed Cookies

Ingredients:

  • 8 Tbsp. butter, at room temperature
  • 3/4 cup powdered sugar
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1 egg
  • 2 Tbsp. anise seeds, lightly toasted and coarsely ground
  • 1 & 3/4 cups flour
  • Zest of 1/2 fresh lemon


Instructions:

1. Preheat Oven:

  • Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.


2. Prepare Dough:

  • In an electric mixing bowl, beat the room temperature butter until creamy.
  • Add powdered sugar, salt, vanilla extract, and egg. Mix until all ingredients are fully blended.
  • Stir in the coarsely ground anise seeds and fresh lemon zest.
  • Gradually add the flour to the mixture, mixing at low speed until fully incorporated.


3. Shape and Bake:

  • Transfer the dough to a cookie press fitted with your desired disk.
  • Press the dough directly onto the prepared baking sheets, leaving space between each biscuit as they will spread slightly during baking.
  • Bake in the preheated oven for 12 to 15 minutes, or until the biscuits are golden around the edges.


4. Cool and Serve:

  • Once baked, transfer the biscuits to a wire rack to cool completely.
  • Serve the anise seed biscuits with a refreshing cup of mint tea for a delightful treat.
